eggs?

So I got like a billionty and one dozen eggs. I like eggs but the whole getting up in the morning and cooking sort of sucks. I like microwaveable quick foods when I have morning sickness.

So I decided I'd make mc muffins and mc breakfast burritos.

So I took a casserole dish and lined the bottom with a pound of breakfast sausage (the kind that comes frozen in a plastic tube). Then I beat 2 dozen eggs and 1 1/2 cups of milk together and poured that on top. Stick in the oven on 350 (stirring the eggs periodically) until the eggs are moist and fluffy. (moist is important! they must be moist or they won't freeze well!)

While your eggs/sausage are in the oven bake some biscuits (or english muffins) according to package directions, shred some cheese and saute some onions and green pepper.

Once everything is done start your assembly line.

For the mc muffins: Cut muffin sized squares out of the egg/sausage dish. Place on muffin, top with cheese. Wrap in foil or freezer paper.
For the burritos: Chop up what is left of the sausage/egg dish and mix in some cheese and the onions and green pepper. (you could add hot sauce too) Wrap the mix up in a flour tortilla then wrap in foil or freezer paper.

This yielded me 8 mc muffins and 12 large burritos. It cost me about $4 for the muffins, tortillas, sausage, green pepper and onion.

Note! after freezing the eggs have the texture of eggs from mc donalds. If you don't like their eggs you won't like these.

That's a great idea! I'm always looking for cheap things to do for breakfasts on work days. I could make these and have them for nearly 3 weeks! (my son is 2 and hates eggs so I'm always looking for ways to use them up other than just making him french toast on the weekends)
